Rice Pilaf

Ingredients
  • 6 tbsp butter
  • .25 cup orzo (you can substitue spaghetti broken into about 1-2 inch pieces)
  • 1.5 cup rice (must be Uncle Ben's parboiled converted rice)
  • 4 cup chicken broth
  • black pepper (to taste)
Instructions
  1. Melt butter in a stock pot over medium heat.

  2. Add orzo and occasionally stir until orzo is browned - butter will also brown.

  3. Add rice and stir to coat - just a minute or so.

  4. Add chicken broth and bring to a rapid simmer or just starting to boil.

  5. Reduce heat to as low as your burner will go, cover pot and do not disturb for 15 minutes.

  6. After 15 minutes, check consistency of pilaf.

    • If it is creamy with some liquid, leave uncovered for 5 minutes and serve.
    • If there is a lot of liquid, cover and let sit for 5 minute, then check again.
    • If there is no liquid but it is not creamy, add 1/4 cup of chicken stock, stir, cover and check again in 5 minutes until creamy.
  7. Add cracked black pepper to taste before serving.
