Royal Icing

I hate using raw egg whites for icing, so this one uses meringue powder.

Ingredients
  • 4 cup powdered sugar (sifted)
  • 3 tbsp meringue powder
  • 10 tbsp water (room temperature)
  • 10 drop food coloring (optional, more for vibrant colors)
Instructions
  1. In a stand mixer fitted with a whisk attachment, combine all ingredients (except food coloring) and beat on high speed until fully combined - about 2 minutes.
  2. Check icing consistency
    • If too thick, add water
    • If too thin, add more powdered sugar
  3. Separate into small bowls. Add food coloring and mix until desired color.
  4. Pipe or brush to decorate

    Icing will completely dry in about 2 hours.

Notes

Freeze leftover icing for up to 3 months.
