- 16 tbsp butter ((softened))
- 1 cup sugar ((splenda works well))
- 1 egg
- 2 egg yolks
- 1 tsp vanilla
- 1 cup sour cream (or yogurt)
- 3 cup all purpose flour
- 2 tsp baking powder
- .5 tsp salt
- fruit jam (about half a jar - apricot is traditional)
Cake batter
- Cream together butter and sugar until fluffy
- Mix in egg, egg yolks, vanilla and sour cream until combined
- Sift in flour, baking powder and salt
Assembly
- Grease a 9" square or round cake pan
- Pour all except about 1/2 cup of batter into pan
- Spread fruit topping of your choice on top of cake
- Mix about 2 tablespoons of flour into remaining batter for the lattice top
- Roll dough into a thin sheet and use a rolling cutter to make strips
- Lay strips on top of cake in whatever pattern you like
- Optionally, brush top with egg wash
Bake
- Bake at 350ºF for 50 minutes
- Allow cake to completely cool before removing from pan - about 45 minutes
