Armenian Perok Cake

Ingredients
  • 16 tablespoons butter ((softened))
  • 1 cup sugar ((splenda works well))
  • 1 egg
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 1 cup sour cream (or yogurt)
  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • .5 teaspoons salt
  • fruit jam (about half a jar - apricot is traditional)
Instructions
    Cake batter
  1. Cream together butter and sugar until fluffy
  2. Mix in egg, egg yolks, vanilla and sour cream until combined
  3. Sift in flour, baking powder and salt
  4. Assembly
  5. Grease a 9" square or round cake pan
  6. Pour all except about 1/2 cup of batter into pan
  7. Spread fruit topping of your choice on top of cake
  8. Mix about 2 tablespoons of flour into remaining batter for the lattice top
  9. Roll dough into a thin sheet and use a rolling cutter to make strips
  10. Lay strips on top of cake in whatever pattern you like
  11. Optionally, brush top with egg wash
  12. Bake
  13. Bake at 350ºF for 50 minutes
  14. Allow cake to completely cool before removing from pan - about 45 minutes
