Armenian Perok Cake



Cake batter

  1. Cream together butter and sugar until fluffy

  2. Mix in egg, egg yolks, vanilla and sour cream until combined

  3. Sift in flour, baking powder and salt


  1. Grease a 9" square or round cake pan

  2. Pour all except about 1/2 cup of batter into pan

  3. Spread fruit topping of your choice on top of cake

  4. Mix about 2 tablespoons of flour into remaining batter for the lattice top

  5. Roll dough into a thin sheet and use a rolling cutter to make strips

  6. Lay strips on top of cake in whatever pattern you like

  7. Optionally, brush top with egg wash


  1. Bake at 350ºF for 50 minutes

  2. Allow cake to completely cool before removing from pan - about 45 minutes
