I hate using raw egg whites for icing, so this one uses meringue powder.
Royal Icing

In a stand mixer fitted with a whisk attachment, combine all ingredients (except food coloring) and beat on high speed until fully combined - about 2 minutes.

Check icing consistency
- If too thick, add water
- If too thin, add more powdered sugar

Separate into small bowls. Add food coloring and mix until desired color.

Pipe or brush to decorate
Icing will completely dry in about 2 hours.
Notes
Freeze leftover icing for up to 3 months.
