Sift together dry ingredients in a large bowl or stand mixer with paddle attachment.

While mixing at a low speed, add bacon grease, molasses and eggs until dough is combined. Dough will be a bit crumbly.

Roll into equal balls of dough.
24 balls for full recipe, 12 balls for half. Usually around 55 grams each.

Roll balls in sugar and place evenly spaced on parchment-lined baking sheet. Do not flatten.

Bake at 375ºF for 10-15 minutes rotating baking sheet halfway through.

Let cool on baking sheet for 10 minutes, then at least 5 minutes on a cooling rack before enjoying.
